What is butterflying?  It's our favorite way to cook a whole bird, and involves removing the back bones so the bird will lay flat.  This gives you better ease of cooking and more consistency.  It also helps us to keep shipping costs down, as they lay flatter and take up less space per pound.  I think you'll really enjoy it!
